Banana Oatmeal Bars

These banana oatmeal bars use just a few simple ingredients — ripe bananas, peanut butter, and rolled oats — for a naturally sweet, no-added-sugar snack. They bake up soft and hearty, and bananas add potassium to help support healthy blood pressure.

  • 1/2 cup peanut butter
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • Optional: 1/3 cup chocolate chips and 1 teaspoon vanilla extract

Instructions

  1. Step 1Preheat the oven to 350°F.
  2. Step 2Spray a 9x9-inch baking pan with cooking spray (an 8x8-inch cake pan works too).
  3. Step 3Mash the bananas in a bowl until smooth.
  4. Step 4Stir in the nut butter until well mixed.
  5. Step 5Mix in the rolled oats and chocolate chips. Stir until everything is well combined.
  6. Step 6Pour the mixture into the prepared pan and smooth into an even layer.

  8. Step 8Slice into 16 pieces.
  9. Step 9Store in a container.

Tips & Substitutions

Cooking tip: You can use frozen bananas — just thaw first. Nutrition fact: Cooking spray keeps food from sticking without adding much fat. Bananas are high in potassium, a mineral that helps with blood pressure control. Substitutions: Substitute raisins or craisins for the chocolate chips, and sunflower or almond butter for the peanut butter.
